I picked up a bottle of Elijah Craig Barrel Proof yesterday, and I'll be pouring myself a dram tonight.
This one has earned quite a following among serious bourbon drinkers, and for good reason. It's bottled straight from the barrel without dilution, so you're getting the whiskey at barrel strength rather than having it proofed down with water before bottling. It's also non-chill-filtered, which helps preserve the oils and compounds that contribute to its rich mouthfeel and flavor.
Elijah Craig Barrel Proof is released in batches throughout the year, and the proof and age can vary from batch to batch. That's part of the fun: one release might lean heavily into caramel, vanilla and oak, while another brings more dark fruit, baking spice, leather or toasted sugar.
This particular batch is one of my favorites.
At barrel proof, I don't rush it. I'll nose it first, take a small sip neat, and then add a few drops of water and see what opens up. With a bourbon this strong, a little water can bring out flavors that were initially buried beneath the alcohol.
That's half the enjoyment of a good barrel-proof whiskey. You don't just drink it. You spend a little time with it.
